I'm avoiding gluten, grains, and nightshades, so I've come up with this super tasty gluten-free tabbouleh recipe that's free from bulgur wheat and tomatoes.

This one doesn't have a coconut ingredient but I'm sharing it because it's such a great healing and healthy salad. The main ingredient, parsley, is a fantastic herb that helps to fight pathogens. Moreover, it helps with fungal infections and parasites, making it the perfect herb for people suffering from candida overgrowth. To make this tabbouleh candida friendly and nightshade free, I've replaced the bulgur wheat with hulled hemp seeds and tomatoes with pomegranate seeds. It's super fast and easy to make!

Free-From Tabbouleh

Serves 2
Prep time: 15 min

Ingredients:
  • 1 cup organic flat-leaf parsley
  • 1 small onion
  • 1/2 cup pomegranate seeds
  • 2 tbsp hulled organic hemp seeds

    Dressing
  • 2 tbsp organic cold-pressed extra virgin olive oil
  • 1 tbsp organic lemon juice
  • 1/2 tsp himalayan salt
  • pinch of ground cumin
  • pinch of cinnamon
  • pinch of all spice
  • pinch of ground black pepper
Instructions:
  1. Finely chop the parsley and onion. Tip: use a sharp knife for the salad to not get too soggy.
  2. Place the parsley, onion, pomegranate seeds and hemp seeds in a bowl.
  3. Combine the dressing ingredients and mix well.
  4. Add the dressing to the bowl and mix well. Serve!
