Grain-Free Coconut Flour & Psyllium Husk Bread – Dairy Free & Egg Free!
Since going on a super-strict, grain-free, egg-free, dairy-free anti-candida and elimination diet, I had no other choice but to make my own bread. Moreover, I've had to experiment and develop my own recipes since most psyllium husk bread recipes use eggs, dairy or both. This bread is free from basically everything - even nuts! To everyone's surprise, this bread has a bit of a fluffy bread-like texture which is rare in gluten-free breads.
The recipe has evolved over the past couple months... at first it was a mixture of almond flour and coconut flour with double the coconut oil. Since listening to the Medical Medium audiobook, I've learned that I need to cut down on fat as well as sugar to starve candida. So, here's a lower fat, nut-free version of the almond and coconut bread (lower carbs, keto friendly) I've been making.
If you're new to psyllium husk, don't be afraid to use it! It's a high-fibre natural laxative that can be found in supplement form... but why take it in a capsule when you can make a delicious, grain-free and glutenous yet gluten-free bread?
This everything-free recipe is a favourite of my boyfriend's... and he prefers it over other store-bought gluten-free breads. I'm sure your gluten-eating friends will love it too! And it's quite versatile. I've thinly sliced them and toasted them for a crunchier cracker alternative that goes great with my raw pumpkin seed dip (recipe to be posted soon).

I've recently purchased a Cuisinart food processor which I heavily use on a regular basis. It's great for mixing up the dough properly.
I've been eating gluten-free bread for the past couple years... and this is the most bread-like texture I've come across! Not only is it gluten free but grain free with the texture, bounce, and flavour of bread... plus it's free from everything that one has to avoid when on an anti-candida diet or elimination diet. It's super tasty with almond butter :)

Ingredients:
- 1/2 cup organic psyllium husk powder
- 1 cup organic coconut flour
- 1/4 cup milled organic flax seeds
- 1 1/2 cups boiling water
- 1 tsp baking soda
- 1/2 tsp himalayan salt
- 2 tbsp extra virgin cold-pressed coconut oil
- 1 tsp organic lemon juice
Instructions:
- Preheat the oven to 175ºC.
- Mix all dry ingredients in a high-speed blender or food processor.
- Slowly add the boiling water while on high.
- Add the lemon juice and coconut oil to the mix. The mixture should have a thick, dough-like consistency.
- Grease a small (1 lb) loaf tin with coconut oil. Transfer the dough evenly into the tin with a flat surface.
- Bake for 45 minutes, until the top is firm and golden.
- Cool for 10 minutes then remove the bread from the tin and cool completely on a rack. For storing, keep refrigerated in a ziplock bag for up to 3 days or freeze for up to 4 weeks.
One serving = 1/4 loaf = 4-5 slices, 1cm thick |
